Wonderful idea! Try these with Lacinato Kale (aka dinosaur kale, black kale, Cavolo Nero, Tuscan kale, black cabbage). It's ALL good!

we love these! and our toddler will eat anything that I call a chip.....he eats most vegetables, but I think early on texture was a key issue with him, and I have to wonder if it is not that way with most toddlers.....give them mealy pureed jarred vegis, call them peas or beans and they never want them again.......but give them sweet potato pudding (steamed food processor smushed sweet potatoes...freshly made and the sweetness and flavor are not off putting)

But our son was an avoider of cereals as a baby, again texture....

We made parsnip, cucumber, celery and radish chips and all were loved this winter! (same theory, thinly sliced and crisped in the oven with olive oil and salt)

I refuse to hide vegis, but i have a kidlet that sees us eating them and he has a love for everything but onions!

Hoping peer pressure and school does not change his vegi love!

We love our Kale chips around here! So glad to hear that the Nuni is a fan too. Perfect description:
" that shatter when you bite into them"
I tell ya, these things satisfy my cravings for any other kind of crispy, high calorie chip.

Looks great! I always try to get veggies into my toddler without disguising them soon. I've only every been mildly successful, so the more tips the better. I'll have to try this soon!

If you're interested, here's one of my gimmicks: http://appetiteforconversation.blogspot.com/2009/12/crunchy-vegetables.html

Good for you! Alas, my children did not appreciate my kale chips. I do believe the word "nasty" may have been uttered. :)

How cool that she is asking for kale! This must be a winning recipe if she chooses it over mac and cheese!
