I got the caramel to the right color (I think) but when I poured in the cream I couldn&#039;t get it to mix - even though I started stirring as soon as I was pouring in the cream the caramel formed a hard candy shape and would not combine with the cream.  I tried twice and gave up.  Any thoughts?</description>

I made two - a three-tiered chocolate with black raspberry preserves filling (with my own berries), and a lemon-poppy-seed cake (also three-tiered) - it was maybe made to feed 200 people all in all?
My mother-in-law though - she makes them all the time. And hers are really good.</description>
